| 2003 will be known as the year we ate our way through Easter. We started with a traditional Sunday feast of ham, Fletch’s famous roasted potatoes, salad and green beans. We could barely walk when we were finished. |

| The following Sunday we were guests of Easter’s final celebratory meal which culminated with the Fete de Saint Marc (festival to honor the patron saint of the local wine growers). Hosted in the garden of Herve’s and Nicole’s neighbor, we were treated to a meal of tripe and pig’s foot. Fletch had always wanted to eat tripe and here was his chance. I did my best and managed to down one “ball” without looking disgusted. We both decided that while it was an interesting test, this would be our last time eating the stomach lining of a cow. I left the pig’s foot for the dogs and resorted to washing the lingering taste out of my mouth with numerous glasses of wine. |

| On Monday Herve and Nicole invited us to join them for their Easter or “Paques” feast. Barely recovered from Sunday, we found ourselves seated with their family and friends for a traditional meal of quiche and leg of lamb. We actually took a walk after this meal. |
